It feels like spring has arrived at the beach so I am craving all the cold, refreshing healthy foods and treats. Does anyone else feel like winter is a cacoon filled with all the cozy things and comfort foods, but when spring comes around it’s time to bust out of that?!

I’m back to drinking iced coffee and NEEDED an açaí bowl in my life ASAP, so I figured I would share the recipe! This is delish, so creamy, and you wouldn’t know it has tons of fruits and veggies! Enjoy! 😁

Açaí bowl recipe ⬇️

Frozen banana

Handful frozen mixed berries

Handful (or two) kale/spinach

A couple carrots

Açaí pack

Couple tablespoons peanut butter

Just enough milk to blend everything

Toppings

I start with 1/4 cup almond milk in a blender (I use a Vitamix) and if I need more, I add it later as this is supposed to be a thick, ice cream-like consistency. Once I have added the milk, I add all of the ingredients except the toppings and blend until everything is combined. Since I use a Vitamix, I blend using the frozen dessert setting. When it is the consistency you prefer, pour into a bowl and add whatever topping you like! I can’t get enough of this!
